Most pistachio exports are raw, in bulk, in one of the following forms: Naturally Open In-Shell Pistachios, Pistachio Kernels and Green Peeled Pistachio Kernels (GPPK).•    Naturally Open In-Shell Pistachios: Open in-shell pistachios are mostly exported as raw dried, in bulk. Meat content is about 54-59%, depending on variety and annual fluctuations. Used mainly as a snack, they are roasted and flavored in-shell. On average, over 100,000 tons of open in-shell pistachios are exported from Iran each year. The top five markets for this product are: the Far East, the Indian subcontinent, the Middle East, CIS countries, and the EU.
