Chef Alfonso's culinary journey began at the age of 13, influenced by the rich food culture of his native Mexico. With over 20 years of experience, he has worked all over the globe – including the UK, Spain, Denmark, Hong Kong, and the USA – in restaurants, hotels, as well as opening his own businesses. Alfonso constantly participates in culinary competitions worldwide. He moved to Indonesia to join Locavore NXT, drawn to the vision and creativity of the project. His role as Head of R&D allows him to combine his culinary expertise with his love of creating, fuelled by his other passion – drawing, which stimulates his creative process. Away from the kitchen, Alfonso channels his energy into sports such as running, swimming, football, boxing and even duathlons.
